Dal Bhat Tarkari (Nepali food thakali)

It all starts on a large metal plate which is piled with rice. The lentil soup is usually placed in a small metal bowl and served side by side.

Daal Bhat Takari is a combination of rice and dal seasonal vegetables - usually some type of green vegetable or ground cauliflower. Also, if you like to eat meat, there is often the option to order chicken, buffalo, or beef with your meal.

Newari cuisine

Newari represented the Nepali food social group who was the first inhabitant of the Kathmandu valley. their different culture, cooking, structure, and language even have a strong presence in the capital. Nepal Newari food is a specific subset of Asian cooking.

Yomari

Somewhere conch shaped, steamed rice dumpling filled with a gooey mixture of jaggery, roasted sesame seed, and coconut.

It is traditionally prepared during the post-harvest celebration called Yomari. It is quite sticky and filled with jaggery and it shapes like fish and it represents Nepali cultural food item.

Juju Dhau

Bara wo 

savory pancake made with urad and moong dal batter, which is mostly served with black channa curry or spicy dry potato sabzi.

Chatamari is another Nepali food item the rice-flour crepe (thinner than bara) that is prepared with a variety of savory topping, eg chopped onion, sweet cilantro, minced food, nut, chillis, and a variety of spices.

Thon/Chhyang

Thon or Chhyang is a milky, sour, and sweet traditional alcoholic drink made from rice or other grains. it has a sour taste and you get a slight sweetness at the end

Samayebji

One of the most popular Newari food. Samaye Baji is made during all the small and big festivals of Newari culture.

It is specially made during the INDRA JATRA festival On that particular day, Samaye baji is distributed to other people outside the house.

panipuri

Gwaramari

It is made from a thick batter of  all-purpose flour, salt and baking soda taste of Gwaramari is crunchy from outside and soft from inside usually it sweet and salty

Aalu chop

The street food dish famously consumed in tea time. this is a tasty potato fried in the oil found well in Nepalese shacks, it is a savor meal which is served with the tamarind flavored and chutney (chili sauces).

These aloo chops are rather common amidst both these locals and tourists. they are the ready take away street meal.

disc-shaped fritters made with small portions of spicy boiled potato mixture that is dipped in chickpea flour batter and deep-fried.

Sekuwa

In Nepal, it is the common dish at Nepalese cuisine, too as Newari cooking and known as Sekuwa. Sekuwa is meat roasted at the raw wood fire in the true traditional Nepalese country fashion. 

At first, while the food is even in its natural phase is combined with homemade raw herbs and spices and other essential ingredients. 

Sekuwa might be of pork, meat, mutton or goat, or poultry of the combination. Sekuwa is really common in Nepal. particularly in that eastern Nepal and Kathmandu, it is found in evening time in the street

Sefali 

Preparation of Sefali and momo is the same difference is that momo is steam and Sefali is fried in the oil but the taste is a little similar. 

It is typical Newari food as momo it also has many flavors like chicken, mutton, veggies, etc.

Poleko makai (maize)

sweet, crisp, deep-fried flatbread made of all-purpose flour. it is first fried and then dipped in sugar syrup so its taste is sweet

Gudpark

rich and dense traditional Nepalese sweet made with evaporated milk solids (khoya/khuwa)  gond sughar ghee nuts etc it is a special sweet in Kathmandu its taste like burfi

Malpua

Deep-fried sweet pancake made with a batter of all-purpose flour and sugar. it is crisp on the periphery but soft and fluffy at the center

When people talk about Nepali cuisine they talk about momo or dal Bhat you know, for example, Indian cuisine is not about butter chicken and Naan. It is so much variety-South India, North India, North-Eastern India.    

Similarly in Nepal  As in India, in Nepal too you have got a lower elevation from 100m to one of the highest in the world; the Himalayas So you can see the ecological diversity climate diversity, and also the crop diversity.

One of the reasons we have so diverse cuisine is also because of the ethnic diversity we have even like many Nepalese are not aware of all these cuisines.

Let's say they have a huge culture of eating buckwheat, Proso millet, foxtail millet you know like there is so much variety of grains. It is not just rice. But our Nepali food culture now has become more rice dependent.
